It must be emphasised the Wild Red and Roe Venison is not controlled by the same rigid Statutory Health and Hygiene conditions as farmed venison, nor is it possible to guarantee the same consistency of quality. To minimise this differential the Denham Estate wild venison is only drawn from estates and areas where there is an abundance of good food and minerals and then the Denham Estate operates a 3-phase selection program. The selected carcasses are then inspected in an EC approved plant to export specifications prior to final selection. Every possible effort is made to ensure consistency and quality of wild venison but it is strongly recommended that customers are aware of the Difference between Farmed and Wild Venison.
